BLEU CHEESE CHIPS
½ bag of kettle chips
5-6 strips bacon, fried and crumbled
2 green onions, chopped
½ c bleu cheese
½ – ¾ cup bleu cheese dressing
Spread kettle chips in a single layer on a large cookie sheet.
Sprinkle with bleu cheese dressing, bleu cheese, onions and bacon.
Place in oven on broil for 1-2 minutes, until cheese is bubbly.
BLEU CHEESE PIZZA
6 oz bleu cheese
2 tomatoes sliced very thin
1 sweet onion, sliced very thin
1/2 c black olives pitted sliced thin
1 1/2 Tbsp extra virgin olive oil for drizzling (more if needed)
Dash of pepper and sea salt
French bread sliced the long way in half, and the short way (to make 4 half slices).
Preheat oven to 325 degrees.
Sprinkle small amount of olive oil over the two halves of the French bread and place on a cookie sheet.
Layer the tomatoes, onions, olives, and sprinkle lightly with additional olive oil.
Add pepper and sea salt sparingly.
Top with bleu cheese and bake at 325 degrees for 15-20 minutes, or until the cheese is hot and bubbly.
Take it out and let it rest for about 2 minutes, slice and serve. Enjoy!
